Lai Yee's Kitchen - Rice Paper Chee Cheong Fun and rice paper crackers
Too much work to make your own Chee Cheong Fun at home or miss having Dim Sum? Here is a great tip I have learnt from @jeanabeanstudio today. It is fun and easy to make. Good try! Cheong fun (肠粉) is on the menu of every Dim Sum restaurant. Cheong fun has a light and soft texture, non-oily, and is served hot right from the steamer. You only need simple ingredients to make it, primarily a batter of rice flour and some shrimp and char siu, or served right with a savory sauce consisting of premier-grade soy sauce and some sugar. BUT if you do not have the right steamer or patience, you won't even bother to make it yourself. Try this Jean's way. Damn easy and works well for me. JUST use those Vietnamese's rice paper for spring rolls! I have even gone a little further by showing you what else you can use these rice papers besides making into spring rolls or cheong fun. My fillings are more like the Ipoh's style cheong fun. Ok Jom!
Ingredients for filling:
. 2 carrots, shredded
. 100g minced ginger
. 1 whole garlic, finely chopped
. 500g minced chicken
. 2 tbsp oyster sauce
. 1 tbsp soy sauce
. 2 tsp white pepper
. 1 tsp sesame oil
. Oil
For Cheong Fun:
. The cooked filling
. Rice papers
. 2 eggs, beaten
. 1 cup Chopped coriander or spring onions
. A bowl of hot water to soften the rice papers
. Oil for rolling the cheong fun
. Water
For Rice Paper Crackers :
. The cooked filling
. Oil for deep frying (must be super hot to achieve the best result)
. Rice papers
For Sweet Sauce :
. 5 tbsp Hoisin sauce
. 1 tbsp soy sauce
. 1 tbsp oyster sauce
. 1 tbsp minced garlic
. 1/2 tbsp minced ginger
. 1 tsp white pepper
. 1 tsp sesame oil
. 1/2 cup water
For Garnishing :
. Chopped Spring onions or coriander
. Fried Shallots
. Toasted sesame (it is good to have)
One filling, two ways of serving it. Fast, easy and appetizing meal for a weekend or a lazy day! Make sure you have really nice spicy sauce to drizzle over the crackers and cheong fun. I had my Mel's Kidnap Me Sauce on standby. I am happy! Thanks Jean for sharing, it works!

I had my first staycation at the Island Shangri-La HK last weekend at their newly renovated Harbour View Suite, it was truly an amazing experience ! A wonderful family staycation!

For this video, we went down to Ho Ho Chimek where they assembled a beautiful Bossam platter for me to devour. Ho Ho Chimek is an authentic Korean restaurant located in East Village that specialises in Korean Fried Chicken while also offering a host of other delectable Korean cuisine. For this challenge, I was offered a secret menu Bossam (Korean Pork Belly) option, together with Kimchi Fried Rice and Jajangmyeon Noodles, that were assembled beautifully onto my giant plate.
Bossam is a unique Korean style of eating involving boiled pork belly served with a number of condiments that you then wrap up in a lettuce leaf into a neat little package. For myself, I was given kimchi, garlic, Bibimbap sauce and spring onions. On its own, the pork was reminiscent of char siew, but slightly fattier and sweeter. Eaten with all the condiments in a wrap, the flavours truly complemented one another with the kimchi and garlic tempering the cloying flavour of the pork together with the satisfying crunch of the lettuce.
The Kimchi Fried Rice was topped with fried eggs and had the distinct tangy flavour from the kimchi juice added. It was specked with kimchi and chicken luncheon meat, with the meat adding a needed savoury dimension with each bite. The Jajangmyeon noodles, a noodle dish topped with a thick black bean sauce and bits of pork, was not overpowering in the slightest as is common for poorly done Jajangmyeon, with the unique black bean flavour and juicy chunks of pork.
This was an enjoyable challenge with a good bit of variety, although the unctuous pork became rather overwhelming towards the end especially with my refusal to eat it as a wrap. I also tried their famous Korean Fried Chicken which was extremely crispy and flavourful on the outside, while juicy inside. The soy-garlic marinade really shone through. Additionally, the Bossam is apparently not publicised because it is very difficult for the owner’s mother to create, although it is one of their best offerings.
Do visit Ho Ho Chimek to get your Korean cravings satisfied! They will be offering a slightly smaller version of this platter for $68 from this Friday onwards, with the addition of Tofu Stew, and aptly named “OPPA Zermatt’s Platter”.

山形ラーメンは自家製麺の店が多く、四天王に代表される醤油に煮干しや鶏ガラを使った優しい味わいのラーメンから、魚介&動物系のWスープのガツン系など、バリエーションも意外と幅が広くて店ごとの個性が非常にあります。今回伺った「さかえや」は基本は蕎麦屋ですが、山形の多くの店がそうであるようにこちらでもラーメン(山形では「中華そば」と呼ばれることが多い)がメニューにあります!今回いただいたのは、山形でよく食べられる「冷やしラーメン」のスタイルの中華そば「冷やしぶっかけ」です!ボリュームたっぷり、冷たいスープでいただく自家製麺のラーメンは、これからの季節には絶対食べたい一杯です!それでは早速、その様子観ていきましょう♪

Tonight Mako ate Yamagata Ramen in the hot spring area! This time Mako visited Kaminoyama Onsen "Soba Sakaeya"! Yamagata is actually Japan's largest ramen kingdom in terms of ramen consumption. Roidgohan has featured four popular local stores called “Yamagata Ramen Big-four” (“Onuma Shokudo”, “Yoshinoya Shokudo”, “Hachimanya” and “Isago Shokudo”), which were so popular in Yamagata.

Many of Yamagata ramen shops have homemade noodles, and there are surprising variations such as ramen with soy sauce and savory ramen with a gentle flavor using seafood & animal type W soup. The width is wide and the individuality of each store is very strong! The "Sakaeya" I visited this time is basically a soba restaurant, but like many shops in Yamagata, ramen (often called "Chuka soba" in Yamagata) is also on the menu here! This time, I had "chilled bukkake" Chinese noodles in the style of "chilled ramen" that is often eaten in Yamagata! Homemade noodle ramen served with a generous amount of cold soup is definitely a must-eat in the coming season! Now let's see how it goes!

收工約左朋友食晚餐, 這間位於油麻地的cafe, 似乎不是連鎖店,而且在網上的風評也不錯,收工一於去睇下。
我們一行二人到達餐廳市面尚算平靜,從外觀察,小店空間不大,在外一眼就看清楚內部環境了,裝修偏向簡約,仿白色磚牆身嘅設計,白色仿雲石餐枱,有格調而柔和的燈光,加上可有特色的裝飾作點綴,略有一些日式cafe的感覺,也少了一種連鎖店公式化的商業感覺。
餐牌的選擇頗多,從意粉飯類扒餐特飲應有盡有。
